This is one of my hubby’s fave weeknight meals.

 

This Low Carb Crustless Pizza Bowl is a flavorful and wholesome twist on traditional pizza—perfect for anyone following a low-carb or keto lifestyle. It captures all the beloved pizza flavors in one hearty, satisfying bowl—no crust required! Quick to make and bursting with taste, it’s an easy go-to for busy weeknights or guilt-free comfort food cravings.

 

Ingredients

  • Ground Italian Sausage — 1 pound
  • Bell Peppers (sliced) — 1 cup
  • Mushrooms (sliced) — 1 cup
  • Marinara Sauce (sugar-free) — 1 cup
  • Shredded Mozzarella Cheese — 2 cups
  • Black Olives (sliced) — ½ cup
  • Italian Seasoning — 1 teaspoon
  • Red Pepper Flakes — ¼ teaspoon (optional)
  • Fresh Basil Leaves — for garnish

 

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C).
  2. Cook Sausage: In a large skillet, brown the ground Italian sausage over medium heat until fully cooked. Drain any excess fat.
  3. Sauté Vegetables: Add sliced bell peppers and mushrooms to the skillet, cooking for about 5 minutes until tender.
  4. Add Sauce & Seasoning: Stir in marinara sauce, Italian seasoning, and red pepper flakes (if desired). Simmer briefly to let the flavors blend.
  5. Assemble Bowls: Evenly divide the sausage and vegetable mixture among four oven-safe bowls.
  6. Top with Cheese & Olives: Sprinkle shredded mozzarella and sliced black olives over each bowl.
  7. Bake: Place bowls on a baking sheet and bake for 10–15 minutes, until the cheese is melted and bubbling.
  8. Garnish & Serve: Let cool slightly, then top with fresh basil. Serve warm and enjoy!

Tip: Add pepperoni, spinach, or extra mushrooms for variety. Perfect for meal prep or a fun “pizza night” that fits your goals!
