Ingredients
- 1 cup Chilled pomegranate juice
- ¾ oz Bourbon
- 1 cup Ginger ale, well chilled
- 4 scoops (approx. 2 cups) Vanilla ice cream
- 1–1½ cups Ice cubes
- Pomegranate arils (optional), for garnish
- Fresh mint sprigs (optional), for garnish
Instructions
Step 1: Chill glasses
Place two clear glasses in the freezer for 5–10 minutes. Frosted glasses keep the float icy and make the colors pop.
Step 2: Add ice
Remove glasses and fill each halfway with ice cubes, leaving room for the ice cream.
Step 3: Mix the base
In a small pitcher, stir together the pomegranate juice and bourbon until combined.
Step 4: Divide the mixture
Pour the pomegranate-bourbon mix evenly into the glasses over the ice.
Step 5: Add the fizz
Slowly pour the chilled ginger ale into each glass, leaving about 1½–2 inches of space at the top to maintain carbonation.
Step 6: Add ice cream
Place 2 scoops of vanilla ice cream in each glass, letting them rest partially above the rim for a beautiful dome effect.
Step 7: Garnish and serve
Top with pomegranate arils and a sprig of mint, if desired. Serve immediately with a straw and spoon to enjoy every layer of this festive float.
